- 6 Large Flour Tortillas (10-inch or burrito size)
- 1 lb Pork Breakfast Sausage
- 8 Large Eggs
- 2 cups Diced Potatoes (or frozen hash browns)
- 1.5 cups Shredded Cheddar Cheese (or a Mexican blend)
- 2 tbsp Milk (for the eggs)
- 1 tbsp Olive Oil
- 1 tsp Smoked Paprika
- 1 tsp Cumin
- Salt and Black Pepper (to taste)
Instructions
- Cook the potatoes: Start by heating olive oil in a large skillet over medium-high heat. Add the diced potatoes and season them with smoked paprika, cumin, salt, and black pepper. Cook the potatoes for 10-12 minutes until they become golden and crispy. Once done, remove the potatoes from the skillet and set them aside.
- Cook the sausage: In the same skillet, add the pork breakfast sausage. Cook it over medium heat until it is browned, breaking it apart as it cooks. Once cooked, drain any excess grease and combine the sausage with the cooked potatoes.
- Scramble the eggs: In a mixing bowl, whisk together the eggs, milk, salt, and pepper. Lower the heat to medium-low and pour the egg mixture into the skillet. Gently stir the eggs as they cook, being careful not to overcook them; you want them soft and fluffy.
- Assemble the burritos: Warm the tortillas slightly to make them more pliable. On the lower third of each tortilla, layer a sprinkle of cheese, followed by the sausage and potato mixture, scrambled eggs, and another sprinkle of cheese.
- Roll the burritos: Fold the sides of the tortilla in towards the center, then tightly roll the burrito from the bottom up. Ensure that the filling is secure inside. Place the rolled burrito seam-side down in a hot, dry skillet. Toast each side for 1-2 minutes until golden brown and sealed.
Notes
Don’t overcook the eggs for the perfect texture. Warm tortillas before filling to prevent tears.
