Description

A delicious and comforting dish made with spaghetti squash and creamy Boursin cheese, perfect as a main course or side dish.


Ingredients

Scale
  • 1 spaghetti squash
  • 8 oz Boursin cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Brush the inside of the squash halves with olive oil and season with salt and pepper.
  4. Place the squash halves cut side down on a baking sheet and roast for about 30-40 minutes, or until the flesh is fork-tender.
  5. Remove from the oven and let it cool slightly.
  6. Use a fork to scrape the flesh of the squash to create spaghetti-like strands.
  7. Combine the scraped spaghetti squash with Boursin cheese in a mixing bowl until well mixed.
  8. Serve warm, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
