Description
A delicious and comforting dish made with spaghetti squash and creamy Boursin cheese, perfect as a main course or side dish.
Ingredients

- 1 spaghetti squash
- 8 oz Boursin cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Brush the inside of the squash halves with olive oil and season with salt and pepper.
- Place the squash halves cut side down on a baking sheet and roast for about 30-40 minutes, or until the flesh is fork-tender.
- Remove from the oven and let it cool slightly.
- Use a fork to scrape the flesh of the squash to create spaghetti-like strands.
- Combine the scraped spaghetti squash with Boursin cheese in a mixing bowl until well mixed.
- Serve warm, garnished with fresh herbs if desired.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days.
