A rich and creamy dish that combines tender chicken, flavorful orzo pasta, and Boursin cheese for a comforting weeknight meal.

- 1 tbsp Olive Oil
- 1 tbsp Unsalted Butter
- 1.5 lbs Boneless, Skinless Chicken Breast, cut into 1-inch cubes
- 1 tsp Salt (or to taste)
- 0.5 tsp Black Pepper (or to taste)
- 1 small Yellow Onion, finely diced
- 4 cloves Garlic, minced
- 1.5 cups Orzo Pasta, uncooked
- 4 cups Low-Sodium Chicken Broth
- 5.2 oz Boursin Cheese, softened
- 3 cups Fresh Spinach, packed
- 2 tbsp Fresh Parsley, chopped (for garnish, optional)
Instructions
- Season the chicken with salt and pepper.
- Heat the olive oil and butter in a large skillet over medium-high heat and add the chicken. Cook for 5-7 minutes until golden brown.
- Remove the chicken and set aside.
- Sauté the onion for 3-4 minutes, then add garlic and orzo. Stir for 1 minute until orzo is toasted.
- Add the chicken broth and bring to a simmer. Cover and cook for 10-12 minutes until orzo is al dente.
- Stir in the Boursin cheese until melted and creamy.
- Return the chicken and add the spinach. Stir until the spinach wilts.
- Serve immediately, garnished with parsley if desired.
Notes
For a cheesier dish, feel free to add more Boursin cheese or sprinkle some parmesan before serving.
