- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- Mix the flour, baking powder, and salt in another bowl. Gradually add to the creamed mixture until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool completely.
- Whip heavy cream and powdered sugar until stiff peaks form for the filling.
- Pipe or spoon the whipped cream onto the bottom of half the cookies, then top with the remaining cookies.
- Melt chocolate chips in a microwave or double boiler and drizzle over the cooled cookies.
- Let the chocolate set before serving.
Notes
Store cookies in an airtight container. They can last at room temperature for up to three days. For longer storage, refrigerate or freeze them.
