Ingredients

  • 1/3 cup unsalted butter, melted
  • 3 large eggs
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup heavy cream
  • 2 tablespoons powdered sugar

Instructions

  1. Make the pastry cream: Whisk together sugar and cornstarch. Gradually add milk and cook, whisking until thickened (5-7 minutes). Temper the egg yolks with the hot mixture, then add to saucepan. Cook 1-2 additional minutes, then stir in butter and vanilla. Chill for 2 hours.
  2. Bake the cupcakes: Preheat oven to 350°F (175°C). Mix cake mix, water, melted butter, and eggs until smooth. Fill muffin cups and bake for 18-22 minutes. Cool for 5-10 minutes, then transfer to wire rack.
  3. Prepare the ganache: Heat cream until simmering, pour over chocolate chips and let sit for 5 minutes. Whisk until smooth and let thicken for 15-20 minutes.
  4. Assemble the cupcakes: Cut a cone-shaped piece from each cupcake. Fill with chilled pastry cream and replace cake tops.
