- 6 boneless chicken thighs (about 1½ pounds)
- 2 tablespoons olive oil
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 tablespoon butter
- 1 small shallot, finely minced
- 3 cloves garlic, minced
- ½ cup chicken broth
- 1 tablespoon fresh lemon juice
- 2 sprigs fresh thyme
- ¼ teaspoon crushed red pepper flakes
- ⅓ cup heavy cream
- Fresh parsley, chopped, for garnish
Instructions
- Pat the chicken thighs dry and season generously with garlic powder, onion powder, paprika, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 6-8 minutes per side until golden and reaching an internal temperature of 165°F (74°C). Remove and let rest.
- Reduce the heat and add butter to the same skillet. Once melted, add minced shallot and garlic; sauté for 1-2 minutes.
- Pour in chicken broth, lemon juice, thyme, and crushed red pepper flakes. Simmer for 3-5 minutes for reduction.
- Stir in heavy cream and simmer gently for another 3-5 minutes until the sauce thickens. Remove thyme sprigs.
- Return the chicken to the skillet or serve individually, spooning sauce over the top, and garnish with parsley.
Notes
Pat the chicken dry before seasoning for a nice sear. Let it rest after cooking to keep it juicy.
