- 1 cup blueberries, fresh or frozen
- 1/4 cup sugar
- 1 teaspoon vanilla extract
- Oil for frying

Instructions
- Prepare the filling: In a bowl, combine the softened cream cheese, blueberries, sugar, and vanilla extract. Mix well until everything is evenly blended.
- Assemble the egg rolls: Lay out an egg roll wrapper on a clean surface. Spoon about 1-2 tablespoons of the blueberry cream cheese mixture onto the center of the wrapper.
- Seal the wraps: Fold the sides of the wrapper over the filling. Then roll it up tightly, using a little water on the edges to seal properly.
- Heat the oil: In a deep pan, heat oil over medium heat, around 2 inches deep.
- Fry the egg rolls: Carefully add the egg rolls in batches, frying until golden brown and crispy on all sides, about 3-4 minutes.
- Drain and dust: Remove from oil and drain on paper towels. Dust with powdered sugar if desired.
