Description

A delightful combination of creamy cheesecake and tart blueberries, topped with a crunchy crumble.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup cold butter, cubed
  • 1 cup rolled oats
  • 1 cup blueberries
  • 1 package (8 oz) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking dish with parchment paper.
  2. Mix together the flour, granulated sugar, salt, and baking powder in a large bowl. Cut in the cold butter until crumbly. Stir in the oats.
  3. Take half of the crumble mixture and press it into the bottom of the prepared baking dish.
  4. Beat the cream cheese with powdered sugar, vanilla extract, and the egg until smooth.
  5. Pour the cream cheese mixture over the crust gently, then scatter blueberries on top.
  6. Take the remaining crumble mixture and sprinkle it over the blueberries.
  7. Bake for 30-35 minutes, or until golden brown.
  8. Allow to cool completely before cutting into squares.

Notes

Use cold butter for a flakier crumble and let the bars cool completely to avoid falling apart.
