A delightful combination of creamy cheesecake and tart blueberries, topped with a crunchy crumble.

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup cold butter, cubed
- 1 cup rolled oats
- 1 cup blueberries
- 1 package (8 oz) cream cheese, softened
- 1/3 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch square baking dish with parchment paper.
- Mix together the flour, granulated sugar, salt, and baking powder in a large bowl. Cut in the cold butter until crumbly. Stir in the oats.
- Take half of the crumble mixture and press it into the bottom of the prepared baking dish.
- Beat the cream cheese with powdered sugar, vanilla extract, and the egg until smooth.
- Pour the cream cheese mixture over the crust gently, then scatter blueberries on top.
- Take the remaining crumble mixture and sprinkle it over the blueberries.
- Bake for 30-35 minutes, or until golden brown.
- Allow to cool completely before cutting into squares.
Notes
Use cold butter for a flakier crumble and let the bars cool completely to avoid falling apart.
