Instructions
- Whisk the melted butter, granulated sugar, and cocoa powder in a large bowl until smooth.
- Add the eggs and vanilla extract, mixing until glossy, then fold in the flour and salt until combined.
- Spread half of the brownie batter into a lined 9×9 inch baking pan and par-bake until just set but still soft in the center.
- Beat the softened cream cheese in a separate bowl until smooth, then mix in powdered sugar and vanilla extract, followed by blue gel food coloring and crushed Oreos.
- Spread the cheesecake filling over the brownie base and gently spoon the remaining brownie batter on top.
- Bake until edges are set and center jiggles slightly, then cool completely at room temperature and refrigerate for at least 3 hours.
- For the chocolate drizzle, heat the heavy cream, pour over chocolate chips, and stir until smooth, then drizzle over chilled brownies before slicing.
