Description

Ingredients

  • 2 sheets puff pastry
  • 8 oz (225 g) goat cheese
  • 1 cup (150 g) fresh blackberries
  • 1 tablespoon fresh thyme (chopped)
  • 1 teaspoon lemon zest
  • 1 egg (for egg wash)
  • Optional sugar (for sprinkling)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly flour your countertop and roll out the puff pastry sheets to about 1/8 inch thick. Cut the pastry into 4×4 inch squares.
  3. In a bowl, combine goat cheese, fresh blackberries, chopped thyme, and lemon zest. Mix well.
  4. Place a spoonful of the filling in the center of each pastry square.
  5. Fold the pastry square over to form a triangle, sealing the edges with your fingers or a fork.
  6. Beat the egg and brush a thin layer over the tops of the pastries.
  7. Optionally, sprinkle sugar over the egg-washed pastries.
  8. Place the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  9. Allow to cool slightly before serving warm.

Notes

Do not overfill the pastries, seal edges properly, and do not skip the egg wash for a golden finish.
