- 2 sheets puff pastry
- 8 oz (225 g) goat cheese
- 1 cup (150 g) fresh blackberries
- 1 tablespoon fresh thyme (chopped)
- 1 teaspoon lemon zest
- 1 egg (for egg wash)
- Optional sugar (for sprinkling)
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly flour your countertop and roll out the puff pastry sheets to about 1/8 inch thick. Cut the pastry into 4×4 inch squares.
- In a bowl, combine goat cheese, fresh blackberries, chopped thyme, and lemon zest. Mix well.
- Place a spoonful of the filling in the center of each pastry square.
- Fold the pastry square over to form a triangle, sealing the edges with your fingers or a fork.
- Beat the egg and brush a thin layer over the tops of the pastries.
- Optionally, sprinkle sugar over the egg-washed pastries.
- Place the pastries on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Allow to cool slightly before serving warm.
Notes
Do not overfill the pastries, seal edges properly, and do not skip the egg wash for a golden finish.
