- 1 3/4 cups all-purpose flour
- 3/4 cup black cocoa powder
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups sugar
- 1 cup buttermilk
- 3/4 cup vegetable oil
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup blackberry compote
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together flour, black cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Mix sugar, buttermilk, vegetable oil, eggs, and vanilla extract in another bowl until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- Layer the cakes with blackberry compote in between and serve.
Notes
Store the cake in an airtight container at room temperature for up to two days or refrigerate for longer shelf life. Let come to room temperature before serving.
