Description

A delicious and easy-to-make dish combining black beans and flavorful yellow rice, perfect for any meal.


Ingredients

  • 1 cup yellow rice
  • 2 cups vegetable broth
  • 1 can black beans, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Cilantro for garnish

Instructions

  1. Heat the olive oil over medium heat in a medium-sized pot.
  2. Add the chopped onion, minced garlic, and chopped bell pepper. Sauté until softened, about 5 minutes.
  3. Stir in the cumin and paprika. Cook for another minute to release flavors.
  4. Pour in the vegetable broth and bring to a boil.
  5. Once boiling, add the yellow rice. Stir well, cover, and reduce heat to low. Cook for about 20 minutes, until rice is tender.
  6. In the last five minutes, stir in the black beans to heat through.
  7. Fluff the rice with a fork, season with salt and pepper, and garnish with cilantro before serving.

Notes

Rinse beans to reduce sodium. Adjust seasoning while cooking for enhanced flavors.
