Description

A hearty and nutritious dish combining black beans, rice, and sausage, perfect for weeknight dinners and gatherings.


Ingredients

  • 1 cup black beans
  • 1 cup rice
  • 1 lb sausage (smoked or kielbasa)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion, garlic, and bell pepper, sauté until soft.
  3. Slice the sausage and add it to the pot, cooking until browned.
  4. Stir in the black beans, rice, cumin, paprika, salt, and pepper.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked through.
  7. Fluff with a fork and serve.

Notes

For a vegetarian option, skip the sausage and add more veggies. Adjust seasoning to taste.
