Description

A hearty and comforting dish made with black beans, rice, and savory sausage, packed with flavor and nutrients.


Ingredients

Scale
  • 1 cup black beans
  • 1 cup rice
  • 1 lb sausage (smoked or fresh)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups chicken or vegetable broth
  • Chopped cilantro for garnish (optional)

Instructions

  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the sausage and cook until browned.
  3. Stir in the cumin, smoked paprika, salt, and pepper.
  4. Add the black beans, rice, and broth. Bring to a boil, then reduce heat to low.
  5. Cover and simmer for about 20 minutes or until the rice is cooked and has absorbed the liquid.
  6. Fluff with a fork and garnish with cilantro if desired. Serve hot.

Notes

For added flavor, use low-sodium broth and cook the sausage thoroughly.
