- 1 cup white or brown rice
- 2 cups vegetable broth or water
- 1 can (15 oz) black beans, rinsed and drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, chopped (for garnish)
Instructions
- Combine the rice and vegetable broth or water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked, about 15-20 minutes for white rice and 40-45 minutes for brown rice.
- Heat a small amount of oil in a skillet over medium heat. Add the chopped onion and sauté until it becomes translucent.
- Add the minced garlic, cumin, chili powder, salt, and pepper. Sauté for another minute, letting those flavors meld together.
- Stir in the black beans and cook until everything is heated through.
- Fluff the cooked rice with a fork and mix it into the black bean mixture in the skillet.
- Remove from heat and stir in the lime juice.
- Serve garnished with fresh cilantro.
