Description

A delicious and nutritious one-pot meal combining black beans and rice, packed with flavor and health benefits.


Ingredients

  • 1 cup white or brown rice
  • 2 cups vegetable broth or water
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Combine the rice and vegetable broth or water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer until the rice is cooked, about 15-20 minutes for white rice and 40-45 minutes for brown rice.
  2. Heat a small amount of oil in a skillet over medium heat. Add the chopped onion and sauté until it becomes translucent.
  3. Add the minced garlic, cumin, chili powder, salt, and pepper. Sauté for another minute, letting those flavors meld together.
  4. Stir in the black beans and cook until everything is heated through.
  5. Fluff the cooked rice with a fork and mix it into the black bean mixture in the skillet.
  6. Remove from heat and stir in the lime juice.
  7. Serve garnished with fresh cilantro.

Notes

This dish can be stored in the refrigerator for 3-5 days or frozen for up to three months.
