Description

Delightful no-bake truffles capturing the rich, spiced flavor of Biscoff cookies, combined with creamy cookie butter and chocolate.

Ingredients

Scale
  • 1 cup Biscoff cookie butter
  • 8 oz cream cheese, softened
  • 1 ½ cups crushed Biscoff cookies
  • 12 oz chocolate chips (milk, dark, or white)
  • 1 tablespoon coconut oil (optional)

Instructions

  1. Crush Biscoff cookies into fine crumbs using a food processor or a rolling pin.
  2. In a medium bowl, combine softened cream cheese and Biscoff cookie butter, blending until smooth.
  3. Gradually stir in crushed Biscoff cookies to form a thick filling.
  4. Scoop out the mixture and roll into 1-inch balls, placing them on parchment paper.
  5. Chill the truffles in the freezer for 20-30 minutes until firm.
  6. Melt chocolate chips in a microwave, adding coconut oil if desired for smoother consistency.
  7. Dip each truffle into melted chocolate, allowing excess to drip off, and place back on parchment to set.

Notes

Ensure cream cheese is softened for easy blending. Adjust truffle size as desired, considering chilling times.
