- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup Biscoff spread
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- Whisk together the flour, baking soda, and salt in a medium bowl.
- Cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until combined.
- Gradually mix in the dry ingredients to form a soft dough.
- Scoop a tablespoon of dough into each muffin cup, pressing gently.
- Add about a teaspoon of Biscoff spread into each indentation.
- Top with more cookie dough and seal the edges.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow to cool slightly before serving warm.
