Description

Delicious Biscoff cookie bars with a rich, caramelized flavor, perfect for sharing or enjoying as a snack.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Biscoff spread

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Spread half of the cookie dough into the prepared baking pan.
  7. Spoon the Biscoff spread over the dough in an even layer.
  8. Drop spoonfuls of the remaining cookie dough on top of the Biscoff layer.
  9. Bake for 25-30 minutes, or until the edges are golden brown.
  10. Allow to cool before cutting into squares or rectangles.

Notes

Be sure to let the cookie bars cool fully before cutting for easier handling.
