Instructions
- Melt 0.25 cup unsalted butter in a medium saucepan over medium heat.
- Whisk in 0.25 cup all-purpose flour and cook, stirring constantly, for 2–3 minutes until golden and bubbly.
- Slowly whisk in 2 cups turkey drippings or broth, continuing to whisk to prevent lumps.
- Bring the mixture to a simmer and cook for 5–7 minutes until thickened, stirring frequently.
- Stir in 0.5 teaspoon chopped fresh thyme or rosemary for added flavor.
- Season with 0.25 teaspoon salt and 0.25 teaspoon black pepper, or adjust to taste as desired.
- Optional: Stir in 2 tablespoons heavy cream for a creamier texture or 1 tablespoon white wine for a touch of brightness.
- Simmer for one more minute if you added wine, then remove from heat and serve.
Notes
For a smoother gravy, consider straining before serving. Store leftovers in an airtight container in the refrigerator for 3-4 days.
