- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped (any color)
- 1 can (15 oz) diced tomatoes
- 1 cup corn (fresh, frozen, or canned)
- 1 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups cooked rice or pasta
- Grated cheese for topping (optional)
- Fresh herbs for garnish (optional)
Instructions
- Cook the beef: In a large skillet over medium heat, add the ground beef. Break it apart with a spatula as it cooks until it’s browned. Drain any excess fat.
- Add vegetables: Stir in the chopped onion and bell pepper. Cook until they are soft and the onion is translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Combine ingredients: Pour in the canned diced tomatoes (with juice), corn, chili powder, cumin, salt, and pepper. Mix everything well.
- Simmer: Lower the heat and let the mixture simmer for about 10-15 minutes. The flavors will blend beautifully during this time.
- Serve: Serve the beef mixture over cooked rice or pasta. Top with grated cheese and fresh herbs if desired.
