- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil over medium heat in a pan.
- Add chopped onions and minced garlic, and sauté until onions are translucent.
- Add sliced mushrooms and cook until they are browned.
- Stir in the rice and thyme, and cook for 1-2 minutes.
- Pour in vegetable broth, season with salt and pepper, and bring to a boil.
- Reduce heat, cover, and simmer for about 15-20 minutes or until rice is tender.
- Fluff the rice with a fork and garnish with fresh parsley before serving.
