Ingredients

- ÂĽ cup olive oil (extra virgin recommended)
- 1 lemon (juiced, fresh only)
- 2 garlic cloves (minced)
- 2 teaspoons dried thyme (or 1 tablespoon fresh)
- 1 teaspoon Dijon mustard
- 1 teaspoon salt (or more to taste)
- 1 to 1.5 pounds boneless, skinless chicken breast (pounded to even thickness)
Instructions
- In a medium bowl, whisk together the olive oil, fresh lemon juice, minced garlic, thyme, Dijon mustard, and salt until well combined and slightly emulsified.
- Place chicken breasts in a large resealable plastic bag or shallow dish and pound to an even Âľ inch thickness if needed.
- Pour the marinade over the chicken, ensuring every piece is coated. Seal the bag or cover the dish and massage the marinade into the chicken for about 30 seconds.
- Refrigerate for at least 2 hours, or up to 24 hours for maximum flavor. Remove from refrigerator 15 to 20 minutes before cooking.
- Remove chicken from marinade and discard excess. Cook using your preferred method until the internal temperature reaches 165°F.
- Let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
Notes
Use fresh ingredients for the best flavor. Marinade chicken for at least 2 hours, preferably 24.
