Description

A game-changing marinade that infuses chicken with fresh and zesty flavors of lemon, garlic, and thyme.


Ingredients

  • ÂĽ cup olive oil (extra virgin recommended)
  • 1 lemon (juiced, fresh only)
  • 2 garlic cloves (minced)
  • 2 teaspoons dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt (or more to taste)
  • 1 to 1.5 pounds boneless, skinless chicken breast (pounded to even thickness)

Instructions

  1. In a medium bowl, whisk together the olive oil, fresh lemon juice, minced garlic, thyme, Dijon mustard, and salt until well combined and slightly emulsified.
  2. Place chicken breasts in a large resealable plastic bag or shallow dish and pound to an even Âľ inch thickness if needed.
  3. Pour the marinade over the chicken, ensuring every piece is coated. Seal the bag or cover the dish and massage the marinade into the chicken for about 30 seconds.
  4. Refrigerate for at least 2 hours, or up to 24 hours for maximum flavor. Remove from refrigerator 15 to 20 minutes before cooking.
  5. Remove chicken from marinade and discard excess. Cook using your preferred method until the internal temperature reaches 165°F.
  6. Let the chicken rest for 5 minutes before slicing to allow juices to redistribute.

Notes

Use fresh ingredients for the best flavor. Marinade chicken for at least 2 hours, preferably 24.
