- 1 cup gluten-free breadcrumbs
- 0.5 cup milk (or dairy-free alternative)
- 0.5 cup grated onion
- 2 large eggs
- 0.25 cup ketchup (plus extra for topping)
- 2 tablespoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C). If you prefer, line your loaf pan with aluminum foil for easier removal.
- Combine the ground beef, gluten-free breadcrumbs, grated onion, milk, eggs, ketchup, Worcestershire sauce, garlic powder, dried oregano, salt, and black pepper in a large mixing bowl.
- Mix all the ingredients together until just combined, being careful not to overmix.
- Transfer the meat mixture to the prepared loaf pan, shaping it into a loaf.
- Spread a thin layer of ketchup on top for added flavor and moisture.
- Place the loaf pan on a baking sheet and bake in the preheated oven for about 60 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove the meatloaf from the oven and allow it to rest for 10 minutes before slicing.
- Serve with your favorite sides, like mashed potatoes or steamed vegetables.
Notes
For storing leftovers, wrap tightly in plastic wrap or store in an airtight container. It lasts 3-4 days in the fridge or up to 3 months in the freezer.
