Description

Delicious and healthier oatmeal raisin cookies made with coconut oil and whole wheat flour.


Ingredients

Scale
  • 1.5 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 1 cup instant oats
  • 1/8 tsp salt
  • 3/4 cup whole wheat flour
  • 1/2 cup honey
  • 2 tbsp coconut oil, melted and cooled
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the whole wheat flour, baking powder, ground cinnamon, and salt.
  3. In another bowl, whisk together the melted coconut oil, honey, egg, and vanilla extract.
  4. Stir in the instant oats to the wet mixture.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. If using, fold in the raisins.
  7. Scoop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Enjoy your cookies warm or store for later.

Notes

These cookies can be customized with chocolate chips, nuts, or other dried fruits. Store in an airtight container at room temperature, or freeze for longer storage.
