Description

A healthy and vibrant twist on traditional nachos using bell peppers as the base, filled with delicious ingredients.


Ingredients

  • 3 large bell peppers
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can black beans, rinsed and drained
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños (optional)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Sour cream and guacamole for serving (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the bell peppers in half lengthwise and remove the seeds.
  3. Place the bell pepper halves on a baking sheet lined with parchment paper.
  4. Mix black beans, diced tomatoes, cumin, chili powder, salt, and pepper in a bowl.
  5. Spoon the mixture evenly into each bell pepper half.
  6. Top with shredded cheese and jalapeños if using.
  7. Bake in the oven for 15-20 minutes or until the cheese is melted and bubbly.
  8. Serve warm with sour cream and guacamole on the side.
