Ingredients

  • 8 oz fresh mushrooms (button or cremini), sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1 cup full-fat sour cream
  • 8 oz egg noodles
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 2 tbsp olive oil or butter

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add ground beef and cook until browned; break it apart with a spatula.
  3. Stir in chopped onions and sliced mushrooms, cooking until the onions are translucent and mushrooms are tender.
  4. Add minced garlic and sauté for about 30 seconds until fragrant.
  5. Pour in beef broth, Worcestershire sauce, and Dijon mustard. Let simmer for 5 minutes to meld flavors.
  6. Reduce heat to low and stir in sour cream until combined. Warm through without boiling.
  7. Meanwhile, boil egg noodles according to package instructions until al dente; drain and fold into the sauce.

Notes

Don’t overcook the beef; use low heat when adding sour cream to avoid curdling. You can adjust seasoning while cooking.
