Description

A classic Beef Stroganoff recipe featuring tender beef, mushrooms, and a creamy sauce that elevates traditional flavors for a hearty meal.


Ingredients

  • 1.5 lbs Beef Tenderloin, cut into 1/4-inch thick strips
  • 2 tbsp Olive Oil
  • 1 large Onion, finely chopped
  • 2 cloves Garlic, minced
  • 8 oz Cremini Mushrooms, sliced
  • 1/4 cup Brandy (optional)
  • 1 tbsp Dijon Mustard
  • 1 tsp Smoked Paprika
  • Salt and freshly ground Black Pepper, to taste
  • 2 tbsp Butter
  • 2 tbsp All-Purpose Flour
  • 2 cups Beef Broth, low sodium
  • 1 cup Sour Cream (full fat)
  • 1/4 cup Fresh Parsley, chopped
  • 1 tbsp Worcestershire Sauce
  • Pinch of Nutmeg
  • Egg Noodles or Rice, cooked
  • Fresh Parsley Sprigs, for garnish (optional)

Instructions

  1. Pat the beef strips dry and season with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat, add onion, and cook until softened (5-7 minutes). Add garlic and cook for another minute.
  3. Add mushrooms and cook until browned and moisture has evaporated (8-10 minutes).
  4. Remove the mushroom mixture and sear beef in the same skillet for 1-2 minutes on each side.
  5. If using brandy, deglaze the pan with it and flambé or scrape browned bits off the bottom.
  6. Return onion, garlic, and mushrooms to the skillet, stir in Dijon mustard, and cook for a minute.
  7. In a separate saucepan, melt butter and whisk in flour to make a roux; cook for 1-2 minutes.
  8. Gradually whisk in beef broth, stirring until smooth and thickened.
  9. Bring the sauce to a simmer and let it thicken (5-7 minutes).
  10. Stir in Worcestershire sauce and nutmeg; adjust seasoning.
  11. Temper sour cream by mixing with hot sauce before adding to the skillet.
  12. Combine everything in the skillet; let it simmer briefly.
  13. Serve over cooked egg noodles or rice and garnish with parsley.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for 2-3 months.
