- 1 pound ground beef
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen peas
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat vegetable oil over medium heat. Add the ground beef and cook until browned. Break it up with a spatula as it cooks. Drain excess fat if necessary.
- Add the chopped onion and minced garlic to the pot. Cook until the onion is soft, about 3-5 minutes.
- Stir in the diced tomatoes, beef broth, diced potatoes, sliced carrots, Worcestershire sauce, thyme, salt, and pepper.
- Bring the mixture to a boil. Reduce heat to low, cover, and let it simmer for about 30-40 minutes, stirring occasionally.
- In the last 10 minutes of cooking, stir in the frozen peas. Let simmer until the vegetables are tender and the stew is thickened.
- Remove from heat and let cool for a few minutes. Serve hot, and enjoy!
