Description

A delicious combination of savory beef sausage and sweet apples stuffed into tender roasted butternut squash, perfect for any occasion.


Ingredients

  • 1 medium butternut squash
  • 1 pound beef sausage
  • 1 cup diced apples
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Halve the butternut squash and scoop out the seeds. Brush with olive oil and sprinkle with salt and pepper.
  3. Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes or until tender.
  4. In a skillet, cook the beef sausage over medium heat until browned. Add the onions and garlic, cooking until softened.
  5. Stir in the diced apples and thyme and cook for an additional 2-3 minutes.
  6. Once the squash is done, carefully flip them cut-side up and fill each half with the sausage and apple mixture.
  7. If desired, sprinkle shredded cheese on top.
  8. Return to the oven for another 10-15 minutes.
  9. Serve warm and enjoy!
