- 1 medium butternut squash
- 1 pound beef sausage
- 1 cup diced apples
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Halve the butternut squash and scoop out the seeds. Brush with olive oil and sprinkle with salt and pepper.
- Place the squash halves cut-side down on a baking sheet and roast for about 30-40 minutes or until tender.
- In a skillet, cook the beef sausage over medium heat until browned. Add the onions and garlic, cooking until softened.
- Stir in the diced apples and thyme and cook for an additional 2-3 minutes.
- Once the squash is done, carefully flip them cut-side up and fill each half with the sausage and apple mixture.
- If desired, sprinkle shredded cheese on top.
- Return to the oven for another 10-15 minutes.
- Serve warm and enjoy!
