- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
- 3 cups frozen mixed vegetables (peas, carrots, corn)
- 3 cups shredded cheese (cheddar or a blend)
- 1 ½ cups cooked pasta (elbow macaroni or any preferred shape)
- ½ cup breadcrumbs (optional for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add the chopped onion and minced garlic to the skillet. Cook until the onion is translucent, about 5 minutes.
- Stir in the diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a simmer.
- Add the frozen mixed vegetables and cooked pasta to the skillet. Mix everything well and allow it to heat through.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Sprinkle shredded cheese evenly over the top. If you like, you can add breadcrumbs for an extra crunch.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for a few minutes before serving.
