Description

Satisfying and savory beef enchiladas filled with ground beef, cheese, and topped with enchilada sauce.


Ingredients

  • 1 lb lean ground beef
  • 8 corn tortillas
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • ½ cup sour cream
  • 2 tsp olive oil
  • Fresh cilantro (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté for about 4 minutes, until translucent.
  3. Add the ground beef, breaking it apart with a spatula, and cook for about 5-7 minutes, until browned.
  4. Stir in the minced garlic, along with salt and pepper, and cook for one more minute.
  5. Pour in half of the enchilada sauce and let it simmer for about 3-4 minutes to blend the flavors.
  6. Spread some enchilada sauce in the bottom of a baking dish.
  7. Fill each corn tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
  8. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
  9. Preheat your oven to 350°F (175°C) and bake for 20-25 minutes until bubbly and the cheese is melted.
  10. Let them cool for a few minutes before serving hot, garnished with sour cream and fresh cilantro if desired.

Notes

For a spicy kick, mix in jalapeños or use a spicy enchilada sauce. Store leftovers in an airtight container.
