Satisfying and savory beef enchiladas filled with ground beef, cheese, and topped with enchilada sauce.

- 1 lb lean ground beef
- 8 corn tortillas
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ½ cup sour cream
- 2 tsp olive oil
- Fresh cilantro (optional)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the chopped onion and sauté for about 4 minutes, until translucent.
- Add the ground beef, breaking it apart with a spatula, and cook for about 5-7 minutes, until browned.
- Stir in the minced garlic, along with salt and pepper, and cook for one more minute.
- Pour in half of the enchilada sauce and let it simmer for about 3-4 minutes to blend the flavors.
- Spread some enchilada sauce in the bottom of a baking dish.
- Fill each corn tortilla with the beef mixture, roll tightly, and place seam-side down in the dish.
- Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
- Preheat your oven to 350°F (175°C) and bake for 20-25 minutes until bubbly and the cheese is melted.
- Let them cool for a few minutes before serving hot, garnished with sour cream and fresh cilantro if desired.
Notes
For a spicy kick, mix in jalapeños or use a spicy enchilada sauce. Store leftovers in an airtight container.
