Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peeled and diced the potatoes into small cubes.
  3. Chop the onion and mince the garlic.
  4. Heat olive oil in a large skillet over medium heat, then sauté the onion and garlic until fragrant.
  5. Add the ground beef, season with salt, black pepper, dried thyme, and paprika, then cook until browned.
  6. Pour in the beef broth, simmer for a few minutes, then remove from heat.
  7. Combine the diced potatoes with the beef mixture, fold in sour cream and half of the cheddar cheese.
  8. Transfer to a baking dish, spread evenly, and top with remaining cheddar cheese.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  11. Let it rest for 10 minutes before serving.

Notes

Feel free to add vegetables like bell peppers or spinach for extra nutrients. Adjust seasoning to taste.
