- 1 pound ground beef
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup refried beans (optional)
- 1 teaspoon taco seasoning
- Oil for frying
- Sour cream for serving
- Salsa for serving
Instructions
- Brown the beef: In a skillet, cook the ground beef over medium heat until it is browned. Make sure to drain any excess fat after cooking.
- Add seasoning: Add the taco seasoning to the beef and stir well. Cook for another minute to mix the flavors.
- Prepare the tortillas: Place a tortilla on a flat surface. If using refried beans, spread a layer on the tortilla. Add a portion of the seasoned beef and sprinkle with cheese.
- Roll up the tortilla: Roll the tortilla tightly to encase the filling. Secure it closed with toothpicks if necessary.
- Heat the oil: In a deep pan, heat oil over medium-high heat, enough to submerge the chimichangas partially.
- Fry the chimichangas: Carefully place each chimichanga in the hot oil and fry for about 3-4 minutes on each side, or until golden brown and crispy.
- Drain the oil: Remove the chimichangas from the oil and let them drain on paper towels to remove excess oil.
- Serve hot: Serve your chimichangas hot with sour cream and salsa for dipping.
Notes
Don’t overfill the tortillas and make sure they are sealed tightly to prevent opening while frying.
