Description

A delicious BBQ Grilled Chicken Wrap filled with smoky grilled chicken, fresh veggies, and creamy ranch dressing, perfect for any meal.


Ingredients

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1 cup BBQ sauce (divided, thick smoky variety recommended)
  • 4 large flour tortillas
  • 2 cups fresh lettuce (chopped)
  • 1 cup tomatoes (diced)
  • 1 cup bell peppers (sliced, red and yellow preferred)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper (to taste)
  • 1/2 cup ranch dressing

Instructions

  1. In a medium bowl, whisk together olive oil, 1/2 cup BBQ sauce, garlic powder, salt, and pepper. Reserve the remaining 1/2 cup BBQ sauce for basting.
  2. Add chicken breasts and coat thoroughly. Let marinate for at least 15 minutes, or up to overnight in the refrigerator.
  3. Preheat grill to medium heat (around 375°F). Clean grates well and lightly oil them.
  4. Place marinated chicken on the grill and cook for 6-7 minutes per side, basting with the reserved BBQ sauce during the last 2 minutes of cooking. Check that internal temperature reaches 165°F.
  5. Remove chicken from grill and let rest for 5 minutes. Slice into thin strips against the grain.
  6. While chicken rests, warm tortillas on the grill for 30 seconds per side or wrap in damp paper towels and microwave for 20 seconds.
  7. Lay each tortilla flat and layer lettuce first, then tomatoes, bell peppers, cheese, and sliced chicken down the center. Use about 3/4 cup total filling per wrap.
  8. Drizzle ranch dressing over the fillings. Fold in the sides of the tortilla, then roll tightly from bottom to top. For extra security, insert a toothpick through the center. Slice diagonally and serve immediately.

Notes

For added flavor, consider marinating the chicken longer and experimenting with different types of BBQ sauce.
