Description

A delightful twist on a summer classic featuring sweet brown sugar-coated corn grilled to perfection and topped with rich smoked butter.

Ingredients

Scale
  • 4 ears of fresh corn on the cob, husked
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional, for garnish)
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons smoked salt (or regular salt if unavailable)
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh lime juice
  • 1 teaspoon chopped fresh cilantro (optional)

Instructions

  1. Preheat your grill to medium-high heat, around 400°F (200°C).
  2. Prepare the corn by husking and rinsing each ear under cold water.
  3. Combine olive oil, brown sugar, smoked paprika, garlic powder, salt, and black pepper in a bowl to make a thick paste.
  4. Coat each ear of corn with the brown sugar mixture using a brush or your hands.
  5. Place the corn on the grill grates and grill for about 10-12 minutes, turning every 2-3 minutes.
  6. Mix the softened butter with smoked salt, garlic powder, lime juice, and chopped cilantro in a bowl for the smoked butter.
  7. Remove the corn from the grill and let it cool for a minute.
  8. Spread the smoked butter generously over each ear of corn and serve immediately.

Notes

Don’t overcook the corn; aim for tender and slightly charred kernels. Consider variations like adding spices or herbs to the butter.
