- 4 ears of fresh corn on the cob, husked
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon chopped fresh cilantro (optional, for garnish)
- 1/2 cup unsalted butter, softened
- 2 teaspoons smoked salt (or regular salt if unavailable)
- 1 teaspoon garlic powder
- 1 teaspoon fresh lime juice
- 1 teaspoon chopped fresh cilantro (optional)
Instructions
- Preheat your grill to medium-high heat, around 400°F (200°C).
- Prepare the corn by husking and rinsing each ear under cold water.
- Combine olive oil, brown sugar, smoked paprika, garlic powder, salt, and black pepper in a bowl to make a thick paste.
- Coat each ear of corn with the brown sugar mixture using a brush or your hands.
- Place the corn on the grill grates and grill for about 10-12 minutes, turning every 2-3 minutes.
- Mix the softened butter with smoked salt, garlic powder, lime juice, and chopped cilantro in a bowl for the smoked butter.
- Remove the corn from the grill and let it cool for a minute.
- Spread the smoked butter generously over each ear of corn and serve immediately.
Notes
Don’t overcook the corn; aim for tender and slightly charred kernels. Consider variations like adding spices or herbs to the butter.
