Ingredients

  • ¼ cup white sugar
  • ½ teaspoon salt
  • 1 cup lukewarm milk
  • 1 egg, beaten
  • 2 tablespoons melted butter
  • 2 teaspoons instant dry yeast
  • 2 cups corn oil or canola oil (for frying)
  • ½ cup powdered sugar
  • ¼ cup cornstarch (optional)

  • 3 tablespoons cornstarch
  • 4 egg yolks
  • 2 cups fresh milk
  • 1 tablespoon butter

Instructions

  1. Combine lukewarm milk, instant dry yeast, and a pinch of white sugar. Let this mixture sit for about 5-10 minutes until it becomes foamy.
  2. In a large bowl, whisk together flour, the remaining white sugar, and salt. Add the activated yeast mixture, beaten egg, and melted butter. Mix until a shaggy dough forms.
  3. Knead the dough for about 8-10 minutes until smooth and elastic. Place it in a greased bowl, cover it, and let it rise in a warm area for 1 to 1.5 hours, or until doubled in size.
  4. In a saucepan, whisk together egg yolks, cornstarch, and sugar. Gradually whisk in the milk. Cook over medium heat, stirring constantly, until thickened (8-10 minutes). Stir in the butter, transfer to a bowl, cover with plastic wrap, and chill.
  5. After the dough has risen, punch it down and shape it into donuts. Heat oil to 350°F (175°C) and fry the donuts for 1-2 minutes on each side until golden brown. Drain on a wire rack.
  6. Once cooled slightly, fill the donuts with the chilled Bavarian cream using a piping bag. Dust with powdered sugar or glaze as desired.

Notes

For best results, fill the donuts just before serving to keep them fresh. Experiment with different fillings and toppings for variety.
