- ½ cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha sauce (adjust for spice level)
- 1 tablespoon soy sauce
- Salt and pepper to taste
- 2 tablespoons oil (for cooking)
- Sesame seeds (for garnishing)
Instructions
- Prepare the chicken by cutting it into bite-sized pieces and seasoning with salt and pepper.
- Cook the chicken in a skillet with oil over medium heat until golden brown and cooked through, about 5-7 minutes.
- Sauté the broccoli, red bell pepper, and carrot in the same skillet for about 3-5 minutes until tender yet crisp.
- Make the sauce by mixing mayonnaise, sweet chili sauce, Sriracha, and soy sauce in a small bowl until combined.
- Combine the cooked chicken with the sautéed vegetables and pour the sauce over everything, stirring to coat evenly.
- Prepare the rice by placing a layer in serving bowls as the base.
- Assemble the bowls by spooning the chicken and vegetable mixture over the rice.
- Garnish with chopped green onions and a sprinkle of sesame seeds.
