- 2 tablespoons honey
- 2 teaspoons Sriracha sauce
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 4 cups prepared white rice, warmed
- 2 cups red cabbage, thinly sliced
- 1 large carrot, julienned
- 1 medium cucumber, halved and sliced
- 1 large avocado, thinly sliced
Instructions
- Prepare the Bang Bang Sauce: In a medium bowl, combine the mayonnaise, Thai sweet chili sauce, honey, and Sriracha sauce. Whisk together until smooth.
- Cook the Chicken: In a large bowl, toss the cubed chicken with vegetable oil, paprika, garlic powder, kosher salt, and black pepper. Cook in a skillet over medium-high heat for 6-8 minutes until fully cooked.
- Assemble the Base: In a serving bowl, add a portion of warm white rice.
- Add Fresh Vegetables: Layer the red cabbage, julienned carrots, and sliced cucumber on top of the rice.
- Add Chicken and Sauce: Place cooked chicken cubes on top and drizzle with Bang Bang sauce.
- Finish with Avocado: Top with slices of avocado and additional sauce if desired.
Notes
For extra heat, adjust the Sriracha in the Bang Bang sauce. Use day-old rice for better texture.
