Ingredients

  • 1 lb boneless skinless chicken breast (cut into bite-sized pieces)
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup mixed vegetables (broccoli florets, diced bell peppers, shredded carrots)
  • 2 tablespoons olive oil
  • Salt and pepper (to taste)
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh lime juice

Instructions

  1. Cook the rice according to package directions and set aside.
  2. Cut chicken breast into uniform bite-sized pieces, season with salt and pepper.
  3. In a small bowl, whisk together mayonnaise, sriracha, honey, garlic powder, and lime juice until smooth.
  4. Heat olive oil in a skillet over medium-high heat. Cook chicken in a single layer for 3-4 minutes until browned; flip and cook another 3-4 minutes until cooked through.
  5. Add mixed vegetables to the skillet with the chicken and stir-fry for 2-3 minutes until tender-crisp.
  6. Remove from heat and toss with the bang bang sauce.
  7. Divide rice into bowls, top with chicken and vegetables, and garnish as desired. Serve immediately.

Notes

Customize with any vegetables you have on hand. For a spicier sauce, add more sriracha.
