Description

A flavorful and satisfying bowl combining tender chicken, crisp vegetables, and a creamy spicy sauce served over rice.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 cups cooked rice (white or brown, prepared ahead and cooled)
  • 1 cup broccoli florets, cut into bite-sized pieces
  • 1 red bell pepper, sliced into thin strips
  • 1 carrot, julienned into matchstick pieces
  • 3 green onions, chopped (reserve some for garnish)
  • 1/2 cup mayonnaise (full-fat recommended)
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce (adjust for spice level)
  • 1 tablespoon soy sauce (low-sodium works great)
  • Salt and pepper, to taste
  • 2 tablespoons vegetable or canola oil (for cooking)
  • Sesame seeds (for garnishing)

Instructions

  1. Cut chicken breasts into uniform 1-inch cubes and season all sides generously with salt and pepper.
  2. Heat 2 tablespoons of oil in a 12-inch skillet over medium heat until shimmering, about 2 minutes.
  3. Add seasoned chicken pieces to the hot skillet in a single layer. Cook for 5-7 minutes, turning occasionally, until golden brown and cooked through.
  4. Transfer cooked chicken to a plate.
  5. In the same skillet, add broccoli florets, sliced red bell pepper, and julienned carrot. Sauté for 3-5 minutes until tender-crisp.
  6. In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and soy sauce until smooth.
  7. Return cooked chicken to the skillet, pour the sauce over everything, and stir for about 1 minute until evenly coated.
  8. Divide rice among four serving bowls, spoon the chicken and vegetable mixture over the rice, and garnish with reserved green onions and sesame seeds.
