Description

Deliciously soft muffins filled with ripe bananas and crunchy pecans, topped with a sweet streusel for a delightful treat.


Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar for streusel
  • 1/4 cup flour for streusel
  • 2 tablespoons cold butter for streusel

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the bananas and then mix in the melted butter.
  3. Stir in the sugar, egg, and vanilla until combined.
  4. Add baking soda and salt, then mix in the flour gently until just combined.
  5. Fold in the chopped pecans.
  6. For the streusel, mix together brown sugar, flour, cinnamon, and cold butter until crumbly.
  7. Fill the muffin cups about 2/3 full with muffin batter, then sprinkle the streusel mixture on top.
  8. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool slightly before serving.

Notes

Serve warm with butter or cream cheese. Pairs well with cold banana milk.
