Deliciously soft muffins filled with ripe bananas and crunchy pecans, topped with a sweet streusel for a delightful treat.

- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1/2 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 cup chopped pecans
- 1/2 teaspoon cinnamon
- 1/4 cup brown sugar for streusel
- 1/4 cup flour for streusel
- 2 tablespoons cold butter for streusel
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the bananas and then mix in the melted butter.
- Stir in the sugar, egg, and vanilla until combined.
- Add baking soda and salt, then mix in the flour gently until just combined.
- Fold in the chopped pecans.
- For the streusel, mix together brown sugar, flour, cinnamon, and cold butter until crumbly.
- Fill the muffin cups about 2/3 full with muffin batter, then sprinkle the streusel mixture on top.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let cool slightly before serving.
Notes
Serve warm with butter or cream cheese. Pairs well with cold banana milk.
