Description

Delicious cookies filled with a creamy filling, combining the heartiness of oats and the sweetness of bananas.


Ingredients

  • 3 cups 1-minute oats
  • 3 cups bread flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon cornstarch
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 1½ cups light brown sugar, packed
  • 1 cup butter-flavored shortening or butter
  • 1 cup mashed ripe bananas
  • ¼ cup light corn syrup
  • 1 tablespoon vanilla extract
  • 4 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 2½ cups powdered sugar
  • 1–2 tablespoons heavy whipping cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, whisk together the oats, bread flour, ground cinnamon, cornstarch, baking powder, and salt.
  3. In another bowl, beat together the brown sugar and shortening (or butter) for about 2 minutes until light and fluffy.
  4. Add in the mashed bananas, corn syrup, and vanilla extract, mixing until smooth.
  5. Gradually mix in the dry ingredients until just combined.
  6. Scoop spoonfuls of dough onto the lined baking sheets and flatten slightly. Bake for 6–7 minutes until the edges are golden.
  7. Let cookies cool briefly on the baking sheet, then transfer to a wire rack to cool completely.
  8. For the filling, beat together the softened cream cheese and butter until smooth, then gradually add the powdered sugar, heavy whipping cream, and vanilla extract until fluffy.
  9. Once cooled, pipe filling onto half of the cookies and sandwich with the remaining cookies.

Notes

Use ripe bananas for better flavor; avoid overmixing the dough to keep cookies tender.
