- 3 cups 1-minute oats
- 3 cups bread flour
- 1 tablespoon ground cinnamon
- 1 tablespoon cornstarch
- 2 teaspoons baking powder
- ¾ teaspoon salt
- 1½ cups light brown sugar, packed
- 1 cup butter-flavored shortening or butter
- 1 cup mashed ripe bananas
- ¼ cup light corn syrup
- 1 tablespoon vanilla extract
- 4 ounces cream cheese, softened
- ¼ cup unsalted butter, softened
- 2½ cups powdered sugar
- 1–2 tablespoons heavy whipping cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a large bowl, whisk together the oats, bread flour, ground cinnamon, cornstarch, baking powder, and salt.
- In another bowl, beat together the brown sugar and shortening (or butter) for about 2 minutes until light and fluffy.
- Add in the mashed bananas, corn syrup, and vanilla extract, mixing until smooth.
- Gradually mix in the dry ingredients until just combined.
- Scoop spoonfuls of dough onto the lined baking sheets and flatten slightly. Bake for 6–7 minutes until the edges are golden.
- Let cookies cool briefly on the baking sheet, then transfer to a wire rack to cool completely.
- For the filling, beat together the softened cream cheese and butter until smooth, then gradually add the powdered sugar, heavy whipping cream, and vanilla extract until fluffy.
- Once cooled, pipe filling onto half of the cookies and sandwich with the remaining cookies.
Notes
Use ripe bananas for better flavor; avoid overmixing the dough to keep cookies tender.
