- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mash the ripe bananas with a fork until smooth in a mixing bowl.
- Stir in the melted butter.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract, and mix well.
- Stir in the flour until just incorporated.
- Fold in the chocolate chips.
- Pour the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for about 20 minutes or until the tops are golden and a toothpick inserted comes out clean.
- Allow to cool before enjoying.
Notes
Ensure bananas are very ripe for the best flavor. Don’t overmix the batter to keep muffins light and fluffy.
