Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper in a large bowl.
  3. Add chicken breasts to the marinade and let sit for a few minutes.
  4. Place marinated chicken in a large baking dish.
  5. Arrange asparagus and cherry tomatoes around the chicken.
  6. Drizzle any remaining marinade over the vegetables.
  7. Roast in the oven for 25-30 minutes or until chicken is cooked through and vegetables are tender.
  8. Garnish with fresh basil if desired, and serve.
