- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 pound asparagus, trimmed
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Fresh basil for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Whisk together balsamic vinegar, olive oil, garlic, oregano, salt, and pepper in a large bowl.
- Add chicken breasts to the marinade and let sit for a few minutes.
- Place marinated chicken in a large baking dish.
- Arrange asparagus and cherry tomatoes around the chicken.
- Drizzle any remaining marinade over the vegetables.
- Roast in the oven for 25-30 minutes or until chicken is cooked through and vegetables are tender.
- Garnish with fresh basil if desired, and serve.
