- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 1/2 cups quick oats
- 1 cup semi-sweet chocolate chips
- 1 cup holiday M&M’s (or chocolate candies)
- 1/2 cup peanut butter chips (optional)
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (3-4 minutes).
- Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Fold in the quick oats, chocolate chips, holiday M&M’s, and optional peanut butter chips and chopped nuts.
- Using a cookie scoop or spoons, drop generous portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden but the centers remain soft.
- Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Allowing the cookies to cool gives them a chance to set up. Check your cookies a little before the minimum baking time to maintain a soft texture.
