Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups quick oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup holiday M&M’s (or chocolate candies)
  • 1/2 cup peanut butter chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (3-4 minutes).
  3. Beat in the eggs one at a time, followed by the vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. Fold in the quick oats, chocolate chips, holiday M&M’s, and optional peanut butter chips and chopped nuts.
  7. Using a cookie scoop or spoons, drop generous portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until the edges are lightly golden but the centers remain soft.
  9. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Allowing the cookies to cool gives them a chance to set up. Check your cookies a little before the minimum baking time to maintain a soft texture.
