- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 2–3 tablespoons lemon juice (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease a donut pan.
- In a mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the milk, vegetable oil, egg, lemon juice, and lemon zest until smooth.
- Combine the wet ingredients into the dry ingredients, mixing just until combined. Be careful not to overmix.
- Gently fold in the blueberries with a spatula to ensure they are evenly distributed.
- Spoon the batter into the donut pan, filling each cavity about 2/3 full.
- Bake for 10-12 minutes, or until a toothpick comes out clean when inserted into a donut.
- Let cool in the pan for a few minutes before carefully transferring them to a wire rack to cool completely.
- For the glaze, mix the powdered sugar and lemon juice in a bowl until smooth and drizzle over the cooled donuts.
Notes
Store in an airtight container at room temperature for up to three days or freeze for up to three months.
