Description

Ingredients

  • 200g feta cheese
  • 2 cups cherry tomatoes
  • 1 bell pepper, chopped
  • 1 onion, diced
  • 4 large eggs
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine cherry tomatoes, bell pepper, onion, and olive oil in a baking dish. Season with salt and pepper.
  3. Crumble the feta cheese over the vegetables.
  4. Bake for about 20-25 minutes, or until the vegetables are roasted and the feta is golden.
  5. Make four wells in the vegetable mixture and crack an egg into each well.
  6. Return to the oven and bake for an additional 10-15 minutes, or until the eggs are just set.
  7. Garnish with fresh herbs if desired and serve warm.
