Ingredients

  • Optional cheese (e.g., cheddar, feta)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a lightly floured surface and cut into rectangles.
  3. Place the pastry rectangles on a baking sheet and bake for about 15 minutes or until golden and flaky.
  4. In a mixing bowl, whisk together the eggs, salt, pepper, and chopped chives. Add any optional vegetables or cheeses if desired.
  5. Remove the baked pastry from the oven and create a small well in the center of each piece.
  6. Pour the egg mixture into the wells of the pastry.
  7. Return the baking sheet to the oven and bake for an additional 10-12 minutes, or until the eggs are set.
  8. Serve warm, garnished with more chives if desired.

Notes

Use cold puff pastry until you roll it out to achieve a flaky texture. Avoid overfilling the wells to prevent spillovers.
