Description

Ingredients

  • 4 large potatoes
  • 1 cup cooked bacon, chopped
  • 1 cup cooked sausage, crumbled
  • 1/2 cup sour cream
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • 2 tablespoons butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Bake the potatoes in the oven for about 45-60 minutes, or until tender.
  3. Once cooked, allow the potatoes to cool slightly, then cut them in half and scoop out the insides into a bowl.
  4. Mash the potato insides with butter, sour cream, salt, and pepper until creamy and smooth.
  5. Stir in the chopped bacon, crumbled sausage, cheese, and green onions until well combined.
  6. Fill the potato skins with the mixture, packing it down gently.
  7. Place the stuffed potatoes on a baking sheet and bake for an additional 20-25 minutes, until they are heated through and the tops are golden.
