- 4 large potatoes
- 1 cup cooked and crumbled bacon
- 1 cup cooked and crumbled sausage
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1 tablespoon butter
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the potatoes in salted water until tender, then drain and let them cool slightly.
- Once cool, scoop out the insides of the potatoes, leaving a small border.
- In a mixing bowl, mash the scooped potatoes with sour cream, cheese, bacon, sausage, green onions, salt, and pepper until well combined.
- Stuff the potato skins with the mixture and top with additional cheese if desired.
- Place the stuffed potatoes on a baking dish and dot with butter.
- Bake for about 25-30 minutes or until heated through and golden on top.
- Serve warm as a delicious breakfast or brunch dish.
Notes
Allow the stuffed potatoes to cool completely before storing. Wrap tightly in aluminum foil or plastic wrap, or place in an airtight container.
