Description

A delightful dish combining the heartiness of potatoes with the savory flavors of bacon and sausage, topped with gooey cheese and green onions, perfect for breakfast or brunch.


Ingredients

Scale
  • 4 large potatoes
  • 1 cup cooked and crumbled bacon
  • 1 cup cooked and crumbled sausage
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 1 tablespoon butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the potatoes in salted water until tender, then drain and let them cool slightly.
  3. Once cool, scoop out the insides of the potatoes, leaving a small border.
  4. In a mixing bowl, mash the scooped potatoes with sour cream, cheese, bacon, sausage, green onions, salt, and pepper until well combined.
  5. Stuff the potato skins with the mixture and top with additional cheese if desired.
  6. Place the stuffed potatoes on a baking dish and dot with butter.
  7. Bake for about 25-30 minutes or until heated through and golden on top.
  8. Serve warm as a delicious breakfast or brunch dish.

Notes

Allow the stuffed potatoes to cool completely before storing. Wrap tightly in aluminum foil or plastic wrap, or place in an airtight container.
